Chicken on the bone (she calls for two whole 3 1/4 lb chickens chopped, but I used breasts for 2 people)
1 cup honey
3/4 cup soy sauce
1/4 cup minced garlic
1/2 cup peeled and grated fresh ginger
1 sweet potato for 2 people
olive oil and salt to taste
Cook the honey, soy sauce, garlic and ginger in a saucepan over low heat just to melt the honey. Arrange the chicken in a shallow baking pan skin-side down and pour the marinade over it. Marinate in the refrigerator for an hour or up to overnight. When you are ready to cook, preheat the oven to 350 degrees. Poke the sweet potato(es) all over with a fork, lightly coat with oil, and sprinkle with salt. Place the potatoes in the oven with the chicken (now uncovered) in the baking dish. Cook for 30 minutes. Remove the chicken from the oven and flip so the chicken is skin side up. Raise the oven temperature to 375. Cook for an additional 30 minutes, or until the juices run clear and the chicken and the potatoes are cooked through. Serve the chicken with a halved potato each and enjoy!
